Shrimp Ceviche Salad

Ingredients (Serves 2)

4 cups of Mixed Greens
1.5 Cups of Frozen Mangoes (canned mangoes work too)
1/4 Cup of Cilantro
1 Lime
1/2 Avocado
1 Cup Frozen Shrimp
1 1/2 Cups Baby Heirloom Tomatoes
1/2 Chopped Red Onions
2 Tbsp Feta

(I know). Another Sideboard-related post. Despite my negative experience I detailed in my last post, I still go back for their food.


  1. Let shrimp sit in 2 Tsp of lime juice.
  2. Add mixed greens to salad bowl.
  3. Chop up cilantro, halve heirloom tomatoes, chop red onions, slice avocado, and chop mango and toss with greens.
  4. Add shrimp and toss.
  5. Add extra lime juice for taste.
