Shrimp Ceviche Salad
Ingredients (Serves 2)
4 cups of Mixed Greens
1.5 Cups of Frozen Mangoes (canned mangoes work too)
1/4 Cup of Cilantro
1 Cup Frozen Shrimp
1 1/2 Cups Baby Heirloom Tomatoes
1/2 Chopped Red Onions
2 Tbsp Feta
(I know). Another Sideboard-related post. Despite my negative experience I detailed in my last post, I still go back for their food.
- Let shrimp sit in 2 Tsp of lime juice.
- Add mixed greens to salad bowl.
- Chop up cilantro, halve heirloom tomatoes, chop red onions, slice avocado, and chop mango and toss with greens.
- Add shrimp and toss.
- Add extra lime juice for taste.
