Burmese Noodle Salad: Nyan Gyi Thoke

Burmese Noodle Salad- Nan Gyi Thoke. The real MVP? The Instant Pot. Am I right? The Instant Pot makes cooking curries a lot less messy and if you have a small apartment, it also minimizes the food smell. This curry tastes like a Thai curry with a twist and it pairs perfectly with udon.
Serves 2
For the chicken curry
4 chicken thighs
1 tsp hondashi 3 tbsp
Vegetable oil
½ an onion chopped
6 cloves minced garlic
3 cups chicken broth (or enough to cover the chicken)
½ tsp. turmeric powder
2 tsp. paprika
1 tbsp. Soy sauce
Serve with udon or rice ( 2 cups) - I like these udon noodles.
For garnish
A lime or lemon (lemon is preferred)
Some chopped cilantro
Boiled egg
Instructions
Get your Instant pot
Sauté onions in vegetable oil add garlic and sauté.
Add turmeric and paprika
Add remaining ingredients.
Cool in instant pot on high pressure for 15 mins.Let the pressure naturally release for 8 mins.
Sprinkle cilantro on top.
Serve with udon or rice.
