Burmese Noodle Salad- Nan Gyi Thoke. The real MVP? The Instant Pot. Am I right? The Instant Pot makes cooking curries a lot less messy and if you have a small apartment, it also minimizes the food smell. This curry tastes like a Thai curry with a twist and it pairs perfectly with udon.

Serves 2

For the chicken curry

  • 4 chicken thighs

  • 1 tsp hondashi 3 tbsp

  • Vegetable oil

  • ½ an onion chopped

  • 6 cloves minced garlic

  • 3 cups chicken broth (or enough to cover the chicken)

  • ½ tsp. turmeric powder

  • 2 tsp. paprika

  • 1 tbsp. Soy sauce

  • Serve with udon or rice ( 2 cups) - I like these udon noodles.

For garnish

  • A lime or lemon (lemon is preferred)

  • Some chopped cilantro

  • Boiled egg

Instructions

  • Get your Instant pot

  • Sauté onions in vegetable oil add garlic and sauté.

  • Add turmeric and paprika

  • Add remaining ingredients.
    Cool in instant pot on high pressure for 15 mins.

  • Let the pressure naturally release for 8 mins.

  • Sprinkle cilantro on top.

  • Serve with udon or rice.
