30 min Brown Sugar Miso Udon

Flavors: Sweet, umami, salty

This noodle dish is perfect when you want carbs with a little bit of veggies and only have 30 minutes.

Ingredients

  • 2 tbsp brown sugar

  • 2 tbsp soy sauce

  • 1 bok choy

  • 1/4 cup frozen spinach

  • 1 tsp miso paste

  • 2 garlic cloves minced & roasted

  • a pinch of hondashi (optional, but it really makes the noodle dish POP)

  • 1 pack of fresh udon

  • Vegetable oil

  • sesame oil (optional)

  • sriracha (optional)

Instructions

  1. Roast garlic.

  2. Mix soy sauce, hondashi, brown sugar, and roasted garlic. Add a dash of hondashi for a umami taste.

  3. Chop up bok choy.

  4. Stir fry garlic and bok choy.

  5. Cook udon noodles 2-3 mins, drain, and add some sesame oil so they don’t stick.

  6. Stir fry noodles and veggie mixture and add spinach. Don’t cook too long or the veggies will wilt.

  7. Serve immediately and add sriracha for a kick.
