Jap Chae: Make a big batch so you have leftovers

Flavors: Sweet, umami

This is the perfect noodle dish that requires minimal ingredients that you can make in 30 minutes. It’s super easy to make and is a great weeknight meal or a mid-week lunch. You know how some noodle dishes don’t hold up when you eat them as let overs? Jap Chae leftovers are just as good day 2.

Ingredients:

  • 1 package sweet potato noodles (or glass noodles)

  • 3/4 cup shredded carrot

  • 1/2 white/yellow onion sliced

  • 3 green onions chopped in 1 inch pieces

  • 3 chopped shiitake mushrooms

  • Hand-full of spinach

  • 4 cloves of minced garlic

  • Sesame oil / vegetable oil for frying

  • 1 egg, scrambled

Sauce

  • 3 tablespoons soy sauce

  • 1 tablespoon brown sugar

  • 1  teaspoon sesame oil

How To:

  1. Mix sauce ingredients and set aside.

  2. Cook sweet potato noodles per package instructions.

  3. Stir fry onion in vegetable oil/ sesame oil until browned.

  4. Add garlic, carrots, the white part of the green onion and stir fry until lightly browned.

  5. Stir fry in the shiitake.

  6. Add egg and spinach and scramble.

  7. Add cooked noodles, green part of the green onion, and sauce and cook briefly.

  8. Serve!
