Pasta Making Made Easy

Pasta - making is NOT hard. Also, it’s not THAT time consuming. After a few rounds in pasta bootcamp (or after reading this recipe), you’ll be able to crank out pasta in 30 minutes.

A couple things before you start…

You need a pasta maker.

I’ve made hand cut noodles and it is a PAIN IN THE BUTT. Just get a pasta maker. I like this Marcato Atlas 150 one because it is cheap, effective, and easy to clean. Don’t fall for the weird electric BS.

Get the 00 Caputo Flour

I had made pasta for the first time with this flour a week ago… and holy smokes - it was the most beautiful pasta I have ever made in my life. This flour is finely milled and it makes your pasta noodles SUPER silky. You can also use this flour for pizza and other pastries. You my fave from Amazon or from the Brick Oven Baker site.

The recipe (serves 3 people - you can scale this bad boy up if you want- the Atlas 150 has a recipe for a larger batch):

  • 300 g flour (Which is a smidge more than 2 cups)

  • 60 g of flour (for running it through the pasta maker)

  • 1 tsp of water (in case your pasta is dry)

  • 3 eggs (room temp)

You need:

  • A pasta maker - I LOVE the Marcato Atlas 150 because it’s affordable and effective

  • 00 pasta flour - TRUST ME

What you need to do:

  1. Make sure the eggs are at room temp.

  2. Pour flour in a bowl & make a little well in the center.

  3. Add the eggs in the well.

  4. Mix with a spatula and then knead.

  5. Add water if the dough it too dry.

  6. Cut the dough 4 sections & run it through the pasta maker per the instructions in the Atlas 150 booklet.

  7. For the noodles in the photo. I go down to #5 thickness and use the fettuccini attachment.

  8. When cooking the pasta, make sure you add it to super boiling water. It should cook in 2 minutes. You can check if its cooked by biting in a noodle & seeing if the insides are doughy and raw.
