Gochujang Udon Stir Fry

Flavors: Sweet, salty, mildly spicy

Paramount Coffee Project in LA has this BOMB udon dish on their menu. It’s a spicy noodle served with an egg- it’s one of those dishes that sticks with you. Here’s my rendition of it. Serves 2-3

Ingredients

  • 1-2 eggs (softboiled- boil for 6 mins)

  • 2 packs of udon

  • 3 tbsp Gochujang

  • 3 tbsp soy sauce

  • 3 cloves garlic (minced)

  • 1/4 cup of red onion of shallots (chopped)

  • Vegetable oil

  • Sesame oil (optional)

  • 2-3 green onions

  • 1 tbsp mirin (or rice vinegar)

  • Greens, like spinach, bok choy (optional)

  • 1/2 cup Kimchi + extra for garnish

  • Salt & pepper

  • Korean red pepper flakes (optional)

Instructions

  1. Stir fry onions in vegetable oil until translucent.

  2. Mix gochujang, mirin, soy sauce, kimch, a little salt & pepper, and a 1 tsp of sesame or vegetable oil until it’s a stir-able mixture.

  3. Fry garlic.

  4. Chop up the white part of the green onion & stir fry.

  5. Add any other leafy green (chopped bok choy, chopped spinach)

  6. Soft boil your egg if you haven’t already.

  7. Boil Udon per package instructions & coat with oil so they don’t stick.

  8. Add cooked noodles to veggie stir fry. Add sauce and mix gently so the noodles don’t break.

  9. Chop up the green part of the green onions - if you didn’t do it earlier.

  10. Plate, add hard boiled egg, and garnish with kimchi and the green part of the green onion.

  11. Top with Korean red pepper flakes for a kick.
