Instant Pot Pho

So a LONG time ago I wrote a recipe for crock pot pho. Super good, super easy. The recipe was poorly written, which may have been a little frustrating for readers. Also- it took a LONG time to make. Like 8 hours. Forever.

Anywho- today, I have a recipe for Instant Pot pho ga / chicken pho. WAY Faster. 1.5 hrs and you have a BOMB pho ga. If you don’t know what an Instant Pot is- HELLO - where have you been the past 5 Black Fridays?

Ingredients

For your ingredients, go to an Asian supermarket for your herbs and a regular grocery store for your whole chicken and additional veggies. 

Instructions

  1. Sear chicken on both sides on a cast iron.

  2. Place chicken in crock pot.

  3. Char both halves of the 1st onion on a cast iron and a 4 inch piece of ginger that is cut in half lengthwise. Toss it in the slow cooker.

  4. Cook your chicken in the Instant Pot with 6 cups of water, 2 star anise, 1 cinnamon stick, 2 cloves, 2 cloves of minced garlic, and 5 cardamom pod for 20 mins high pressure & let it slow release for 10 mins.

  5. Take the chicken out of Instant Pot. Remove the meat from your chicken and shred it.

  6. Strain the broth & add it to Instant Pot.

  7. Char the second onion and another 4 inch piece of ginger like step 1 & 2.

  8. Add chicken bones to the Instant Pot with some more water (2 cups) and the ginger + onion, star anise, 1 cinnamon stick, 1 clove minced garlic, 5 cardamom pods, 5 cloves, and 1 tbsp of Thai chili paste. Start up the Instant Pot on high pressure for 20 mins & let it naturally release for 10 mins.

  9. Add in 2 tablespoons of soy sauce, a dash of hoisin sauce, and 0.5 tablespoon of salt.

  10. If a fatty layer develops on the top of your broth- and you don't want it, scoop it out.

  11. Get rid of the bones & and remove the excess spices out of broth.

  12. Slice up 2nd onion.

  13. When you're ready to eat, bring the amount of broth you want to eat to a rolling boil and add in chicken, sliced onions, and whatever other veggies you want.

  14. Add noodles and cook to desired consistency. Only add as much as you want.

  15. Garnish with lime, sriracha, basil, soy sauce, sliced jalapenos, plum sauce, green onions, and cilantro.

  16. Serve & have your mind blown in 1/8 the time.
